Brown rice salad

Brown rice salad:

brown rice saladIngredients:

2 1/2 cups cooked brown rice
1 red onion diced
1 red capsicum chopped in chunks
1 yellow capsicum chopped in chunks
handful silverbeet, chopped fine
1 can alaskan/wild salmon
1 juice of a lemon
6 tbsp olive oil
salt & pepper to taste

Combine all ingredients in a bowl. Chill in the fridge for 2 hours. Serve.
